White Chicken Chili

Ingredients
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 pound cooked chicken breast, shredded
2 cans (15 oz each) white beans, drained and rinsed
2 cans (4 oz each) diced green chiles
4 cups low-sodium chicken broth
2 teaspoons ground cumin
2 teaspoons chili powder
1 teaspoon paprika
1/2 teaspoon black pepper
1 teaspoon salt (adjust to taste)
3/4 cup plain Greek yogurt
1 cup shredded cheddar cheese
Fresh cilantro, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic; cook until softened, about 3–4 minutes.
- Stir in shredded chicken, white beans, green chiles, chicken broth, and spices.
- Bring to a simmer. Reduce heat to medium-low and simmer for 15–20 minutes, stirring occasionally, to let flavors meld.
